So far, 2012 has already brought me:

  • Delicious healthy breakfasts. These symbolize getting back on the healthy train, which I unfortunately abandoned for a while…

Soy-based yoghurt, granola, apple, and cinnamon

Vegan overnight oats topped with strawberries, blueberries, almond slices, and coconut

  • Long beach walks with my Bestie Fenne and my favorite dog Jamie!

Ears flopping in the wind...

  • Sheep brains to dissect! …Wait, no that can’t be right!

It is…

I will not picture this awful ordeal (even though I could) because it is just plain gross… I hated doing it and I tried to get out of doing the assignment claiming that it went against everything I believe in being a vegetarian and all. But unfortunately I had no choice but to participate in the practical. Luckily I found a partner who didn’t mind doing all the cutting so even though I had to smell and watch the awfulness I at least didn’t have to touch it.

One more practical next Friday and then another with rat brain slices and after that I am done with this class.

YUCK!

Happy new year to all! As for the blog, I am still planning on reviewing my 2011 goals and setting new ones sometime, but I need some more time to get out of “Christmas vacation-mode.”

In the meantime I am almost caught up with every episode ever made of Breaking Bad, my new addiction! :D Love that show… 13 more episodes to go…

Christmas 2011 Recap

Even though it’s been a week or two, I hope you all had a great Christmas! I say, better late than never!

My Christmas was great! I’ve got the pictures to prove it!

Most of them are of the amazing food we had, because let’s face it: Christmas really is about good food with friends and family! ;)

On Christmas eve I had my favorite dinner with my family: gourmet! This has got to be my favorite Christmas tradition, it’s just so much fun! Everyone gets a small skillet and there’s a big hot plate in the middle of the table. You can cook your own dinner right then and there! :D

The next morning it was officially Christmas day and we had a Christmas brunch!

My mom made an amazing mushroom pie, complete with puff pastry Christmas tree crust of course!

That evening we headed over to my aunt’s house for Christmas dinner with the family! My aunt, uncle, cousin and her boyfriend, my grandmother and my parents and brother Thomas were all there. The Christmas spirit was definitely there and we had a great evening. Look my aunt’s beautiful Christmas tree! Gorgeous! :O

The spread was also amazing! There was sushi, sate, meatballs and satay sauce, wraps, quiche, french bread, cantilope, delicious mushroom risotto and of course Christmas isn’t complete without my aunt’s famous Zucchini soup! Plenty vegetarian options for me. Needless to say I had no problem overeating scandalously! ;)

The trifle that we had for dessert was absolutely heavenly! :O

We had a great evening together!

The next morning we had (yet another) Christmas breakfast. In Holland we celebrate boxing day, or 2nd Christmas day as we call it. The rest of 2nd Christmas day was spent relaxing on the couch with my family and an easy, light dinner!

This year we all decided to add a third Christmas day even! A bunch of thomas’ and my friends came over for a delicious Christmas dinner with friends! Everyone always spends Christmas with family and so there isn’t always time for friends. That’s why we decided to throw a 3rd Christmas day party! We collected chairs, silverware and borrowed my moms Christmas plates to make for a great set-up!

Although I don’t remember exactly what delicious appetizer our friend and Hotelschool student Etienne whipped up, I do remember it was absolutely delicious! There was puff pastry, chicory, spinach, parmesan and beurre-blance sauce involved.

For the main course we had grilled ham, potato gratin, green beans and parsnip cream sauce. I had a leftover piece of my moms mushroom pie instead of the ham. I stopped taking pictures because I was too busy talking to people and having fun! Sometimes life just gets in the way of blogging, doesn’t it.. ;)

For dessert I made a trifle, inspired by my aunt’s dessert earlier that week of course! I used cake, cookies, custard, whipped cream, strawberries, red currants, blueberries and lots of amaretto! It was very, very good.. :O

We had a great time!

All in all, my Christmas was nice! Filled with quality time with family, lots of relaxing and delicious food!

I am still home in Schiedam with my parents, but I am heading back to Maastricht tomorrow. I soon will be blogging about my new years resolutions and new goals I plan to set for 2012!

Merry Christmas!

This morning, Thomas and I drove 200 km (125 miles) home to Schiedam for Christmas! We are happy to be home and have three awesome Christmas days ahead of us!

I made the most awesome almond Christmas tree cookies!

Going Out With A Bang(s)!

When I feel bad (for example, because of failing statistics AGAIN), I like to do radical things! ;) Most of all I like to go shopping.. But since usually my budget doesn’t allow that, I have to think of different ways for me to be able to express myself and say “screw the world” every once in a while! :P  

This time, it was bad luck for my hair! ;)

Now I’m off to buy my Christmas presents and to bake a whole lot of Christmas cookies and cake pops! :D Long day… :P

Brain Food

Studying is going well, we’re on schedule!

But even then a weekend such as this calls for some brain food!

Looking at the massive amount of fresh spinach I had in my fridge I decided on the most delicious, nutrition-packed brain food I could think of: Green Monster!!!

YUM!

In the mix:

  • 1 tbs of wheat germ
  • 1 tbs of flax seed
  • a splash orange juice (sorry Thomas :D )
  • a splash of water
  • 1 banana
  • 1 cup of frozen strawberries
  • 4 big handfulls of fresh spinach
  • lemon juice
  • few drops of stevia extract
  • 5 ice cubes

Christmas Desktop!

I found another reminder of Christmas!

A pimped out Christmas desktop does wonders! Since I sit at my desk to study, and use my computer a lot to type up summaries or look stuff up, it’s constantly in my face! My best friend Fenne introduced me to a little piece of software called Mac Lamps X, which allows you to decorate your computer screen with Christmas lights! Although this would probably annoy most people, Fenne and I are loving it! So fun!!! :D

With a desktop like that I won’t be able to forget about Christmas…

Four Reminders Of Christmas

Final exams start upcoming Tuesday so the preparation has officially begun! I have to take exams in statistics I, psychopathology and critical thinking.

Taking 3 classes as once (while 2 classes at once is considered full-time) has been very tough and homework has been kickin’ my butt! Needless to say, I am hitting the books!

As I’ve said before, the biggest downside to this isn’t putting my social life on hold and having absolutely NO free time for 2 weeks, but it’s not being able to fully enjoy the weeks before Christmas!

Usually I am well into the Christmas spirit around this time! After all, it’s just 9 days till Christmas! I’d be making Christmassy dinners, baking cookies, and other yummy things! Boo for exams.. :(

But! As always, I try to make the best of it! I have a countdown on my phone, reminding me a couple times a day that in a week it’ll all be done with and it’ll be Christmas! I also try to incorporate 4 other reminders of Christmas into my busy schedule!

1) Cinnamon Hot Chocolate!

I have been drinking hot chocolate like crazy! It makes me feel so cozy and Christmassy! :P I like it best with a lot of cinnamon mixed in, no lumps! :P

2) Christmas Music!

I usually like best to study in absolute silence, but for Christmas I’ll make an exception… I like to listen to the somewhat older Christmas songs during studying and I break out Michale Buble, N*Sync, the Backstreet Boys, Britney Spears, and Wham! at times I am not submerged in complicated statistical calculations! :P

3) Christmas movies!

Usually I watch all my favorites again and again each season. But I simply don’t have time for that now… What I do is I’ll watch one of my favorite for 10 minutes, as a study break! Then I study for another hour and watch the next 10 minutes! It takes a while to get through a movie, but at least this way I don’t have to feel guilty for not studying and I take study breaks! Next up is the Grinch, which is one of my absolute favorites! I also love the Muppet Christmas Carol, Polar Express, Elf, the Santa Clause movies and Deck the Halls! :D

4) Soaking up the Christmas tree!

Even though I am focused on exams, a girl needs to eat! :P I take time for my dinner and try to make it my relaxing moment of the day! I sit in the living room with just the Christmas tree lights turned on and watch a little TV during dinner!

I am hoping this way, I’ll still feel like Christmas is getting close! :D So far it’s been working! :)

I can’t wait for it to be Christmas…

Oh Christmas Tree, Oh Christmas Tree!

As we all know, Christmas is right around the corner! Just 11 more days ’til the 24th!

So I believe it’s time I show you guys our Christmas tree!

Last week we bought a tree and decorations, opened a bottle of wine, and decorated our tree!

In just a short hour, one bottle of wine, and with the help of some dental floss, our tree was up!

My brother Thomas had forgotten to pick up hooks to hang the decorations in the tree! Luckily most of the decorations came with strings, but some were missing. In a stroke of genius I thought of using dental floss to hang them! I think it’s perfectly representative of how on top of things we are …not at all, that is! ;) I mean, who doesn’t have string in their home? We don’t :P

But it all turned out fine!

I love having a Christmas tree in the house and turning off the lights! It makes it ‘gezellig’ as we say in Dutch. Believe it or not, there is no direct translation for this concept in English! It’s because us Dutch people are so ‘gezellig’ unlike any other culture! ;)

We found a good use for our leftover decorations!

It’s too bad I can’t fully enjoy these weeks before Christmas, that I usually enjoy so much :( I have final exams last week and am absolutely swamped in things I still need to do to prepare! I’m retaking a statistics class this year, and I absolutely refuse to fail it again! Listen up math, you and your stupid numbers will not the get the best of me this year! *fingers crossed*

Our New Apartment!

Yes, yes… I know: long overdue!

But here they are! Pictures of the new apartment my brother Thomas and I have been living in for the past two months, and plan to live in many more months to come. We are loving it and having a great time living together! …most of the time anyway! ;)

Although it’s tiny, a little bit cluttered and usually a giant big mess, I love my room! It’s got everything I need, it’s not too big (easier to keep it clean) and it’s just my place in the house! I love the big giant window that’s right next to my bed! I can lay in bed at night and look at the stars, it doesn’t get much better than that! :P

Oh yes.. Today it is the 1st of December, my favorite month of the year of course! :D
Today marks the first day that I officially allow myself to listen to Christmas music, get excited about decorating and truly get into the Christmas spirit!! :D I am LOVING this

And this is a picture of the 36 gingerbread man cookies I slaved over for hours last night! Aren’t they adorable? :D
The icing is lemon meringue and very very tasty…

I may or may not have made meringues in the oven with the leftover icing… ;)
